Ingredients
  • 6 long english cucumbers
  • 1 red onion
  • 3 cloves of garlic
  • 1 bunch of mint
  • 1 bunch of parsley
  • 1/2 cup extra virgin olive oil
  • 1/2 cup white wine vinegar
  • salt & pepper
Directions

rough chop all vegetables
toss with remaining ingredients (except for salt and pepper)
cover and refrigerate overnight
pulse in a food professor until you get the texture you want
season with salt & pepper
