Salt Roasted Beets with Feta, Orange & Mint
Ingredients
  • 3 large beets
  • 2.00 kg kosher salt (can be reused)
  • 1 orange peeled and sliced across segments
  • 30 g honey
  • 200 g Macedonian feta
  • 1 bunch fresh mint
  • extra virgin olive oil
Directions
  • Pack the beets (with skins on) in the salt, place in a roasting pan and place in a 300 degree oven for 3 hours
  • Mix orange juice, honey and zest
  • Once the beets are done, remove them from the salt.  This requires breaking up the salt (a mallet or hammer works well for this.)  Gently lift beets out with a steel serving spoon.  Wipe excess salt off beets
  • Using a paring knife and a clean towel you don’t mind staining remove the skins
  • Slice into rounds with mandolin or sharp knife
  • Toss the beets in a little olive oil, pepper and orange juice dressing and place a few slices on each of the 6 plates.
  • Place chunks of feta on each plate and arrange orange slices on top.  Garnish with a few pieces of torn mint
