This 2006 Pinot Noir is a bright red ruby red colour in glass. A quick swirl releases aromas of black cherry, strawberry, and vanilla with a hint of chocolate. On the palate the black cherry and strawberry flavours dominate with hints of chocolate and vanilla on the finish. Soft tannins and a silky mouth feel add to a lingering finish.
The Pinot Noir was harvested in the early morning as the cooler temperatures keep the fruit characteristics of the grape at their peak. After being crushed the grapes were sent to cool stainless steel tanks where they sat on their skins for several days. After fermentation the wine was placed in older American oak barrels for 10 months. By using older oak barrels the wine picks up softer oak flavours and allows the fruit characteristics to be more prominent. The Pinot Noir was blended together before bottling in August 2007.
