First course - Shaved melon salad with extra virgin olive oil, goat cheese, basil and pancetta

Second course - Dungeness crab parfait with avocado and tomato confit

Third course - Charcoal roasted beet with whipped mascarpone cheese and watercress

Fourth course - Roast duck breast with a miso-orange glaze and roasted carrot pureé

Fifth course - 24 souse vide beef short rib with pomme pureé, black garlic jus and crispy shallot
